White Perch

White perch is not a true Perch but rather is a fish of the Bass family.

 

It is pale olive or silvery green on the sides, and white on the belly.

Notes

Origin: Lake Erie, Ontario

Taste: White Perch cooks to a white, flaky flesh and has a flavour profile similar to bass.

Cooking Methods: Pan sear or deep fry.
